Arepas versatility

Arepas are an indigenous dish quite common before colonization and America’s discovery. Its principal ingredient is corn, which is combined with salt and creates a dough that is later put on the grill, you can either do it in a cooker, carbon, or a wood oven and even fry them.

You can also do yuca arepas or from other ingredients such as pumpkin but the original one has always been with corn.

In the past, the easiest way was to cook the corn, grind it with a machine usually manually, add salt and mix it doing the shape before grilling. Nowadays things are way easier! You can buy a whole package and take it home to avoid doing the whole process or you could also buy the precooked corn dough, add some salt, water and mix it.

The reality is that now you can easily add arepas to your died, you can prepare them and even find them in a lot of Latin America places, besides its versatility is amazing.

Arepas can go along with any meal, they are amazing for breakfast, lunch, or dinner, you can either eat them alone, with cheese and butter, eggs or stuff them with vegetables or meat, fried and even dipped on chocolate or milk.

But we have to say it again, arepas are just a blessing! specially for Colombians and Venezuelans because they are part of their daily diet, but its also a meal that has migrated to other parts of the world.

In Venezuela there is a big variety of arepas with different combinations, stuffs, and tastes. You can also find them fried, sautéed, sweet, with corn, cheese, and so much more. We will explain two different recipes so you can do them at home, they are super easy to prepare and cheap, the best part is how delicious they are!

The first thing is the dough because with this you will know how to prepare every single type of arepas, you will only need to change the stuffs and combinations.

You must be aware that if you are using the arepas to fill them inside, you must make them a little bit ticker to be able to open them and fill them, or you can make them thin, big or small! As you wish!

This is the traditional Venezuelan recipe, it has chicken and avocado but you can add as many ingredients as you want!

Venezuelan Arepas Recipe

Ingredients for the stuff
1 chicken breast
1 avocado
30ml of mayonnaise
1 red onion
Black pepper
1 garlic glove
Lemon juice
Chopped tomato (optional)
Fresh coriander or parsley (optional)

Cook the chicken and shred it. Chop the tomato, coriander or parsley and the red onion and smash the garlic glove.

In another bowl, add all the ingredients and mix them until you get a homogeneous mix. 

Before you serve it, cut the arepas in a ‘mouth way’ and stuff them with the mix.

The Venezuelan arepa called pabellón is a very curious recipe, and is created to honour the typical dish called pabellón criollo.

This arepa contains black beans, shred meat, sweet plantain, and it is a delicious mix of salty and sweet falvours.

Ingredients for the shred meat
In a pan add vegetable oil and the meat which must be previously cut. In a pressure cooker, sauté the tomatoes, garlic, pepper, onion, salt, cumin, and black pepper, make sure that you cook it slowly. Add English sauce, the shred meat, the stock, coriander and cook it until the meat is soft.

After the meat is cooked, shred it a little bit more so it is super thin.

Ingredients for the black beans
2 precooked cans of black beans
Sweet chili chopped
1 garlic glove
Cumin, salt and pepper
Vegetable oil

Sauté de vegetable oil with the chopped onion, the sweet chili, add salt, cumin and pepper, last but not least add the beans, mix and let it cook for 15 min.

At the end, peel 2 ripe plantain, cut them in diagonal slices and fry them.

We already have all the stuff ingredients, and its finally the moment of the truth! Open the arepa previously fried and add the ingredients, black beans, shred meat, ripe plantain and if you wish you can even add grated cheese.

200 grams of baby clams
200 grams of mussels
200 grams of octopus
200grams of oysters
200 grams of clams
1 pepper
1 onion
4 sweet chilies
1 lemon
Half of a cup of vinegar
3 oil spoons
Tomato Sauce
1 litter of water
2 salt spoons
1 clack pepper spoon

In a bowl, boil the water, the vinegar, the salt, and the pepper, and let it set. The baby clams and the clams, boil them until they open, take the meat out and put it a bowl.

The mussels, open them one by one, take the meat out and put them in a bowl. Cook the octopus in enough water with salt and vinegar. Once is soft, take It out and cut it in small pieces.
Boil the shrimps, strain them, and put them into cold wate to avoid them over cooking.

Chop the onion, pepper, sweet chili, add oil and salt plus de tomato sauce and add all the seafood. And finally, is all done for our Rompe Colchón stuff, you just need to stuff the arepa and enjoy it!
