Cochinita Pibil: a traditional Mexican recipe with pork
This recipe is too traditional in the Yucatan peninsula, the cradle of the Mayan civilization, where its main ingredient is, of course, pork (originally from Spain) and other ingredients and cooking techniques typical of Mexico.
Its traditional preparation involves cooking on the ground over hot stones, however today, for everyone’s convenience, we are going to do a slightly different cooking technique but with which we will have a very delicious recipe.
Ingredients:
- 1 kg of pork loin
- 80 gr of achiote pulp or paste
- 2 dehydrated chilies
- juice of one orange
- juice of two lemons
- a pinch of cumin
- a pinch of dried oregano
- 2 purple onions and one white
- 50ml olive oil
- 2 tablespoons of vinegar
- salt and pepper to taste
Preparation:
Meat marinade sauce
- In a large container add the juice of one lemon, the orange juice, the cumin, the oregano, the olive oil, the vinegar and the achiote pulp. Stir and leave for five minutes.
- Then we take all the previous ingredients to the blender glass, and blend until we get a homogeneous and thick texture. We add salt and pepper to taste. With this sauce we will marinate our pork.
Baked pork
- Cut the white onion into feathers
- We season the meat
- In a baking tray, put a piece of aluminum foil large enough to cover all the meat. Put the white onion and the piece of pork loin on top, bathe all the meat with the achiote sauce that we prepared in step 2 and close the aluminum foil as if it were a loose package. (Reserve some of the sauce for the final presentation)
- Put in the fridge from one day to the next preferably, so that the meat is impregnated with all these delicious flavors.
- The next day, we take the tray out of the fridge and preheat the oven for 10 minutes at 200º C in total heat (top + bottom + fan) to simulate the buried oven.
- Bake for 1 hour at the same temperature so that the meat does not dry out and remains tender.
- When the baking time is over, carefully open the aluminum foil, cut the meat into thick slices and then when it is colder, crumble or shred with your hands into small pieces.
- We added what was left over from the achiote marinade sauce so that the shredded meat takes on all that color.
Final step and plating
- Chop 1 ½ red onion into small squares or “brunoise” (reserve the other half of the onion for plating).
- Hydrate the dried chiles, remove the seeds, chop them. Remember that depending on how much you like spicy you can add more or less.
- In a large container add the chopped onion, the chopped chilies, the juice of the other lemon, a pinch of salt and set aside.
- On the other hand, chop the half purple onion that we had left in julienne strips and now to serve.
- Finally, put the shredded meat in a container, cover it with the onion marinade and decorate with julienned onions.

Chipotle Smoked Chops
This is a Mexican recipe with pork chops that everyone will love and you can also prepare ahead of time to spend more time with your family and less time in the kitchen.
Ingredients:
- 1 kilo smoked pork chops
- 2 tablespoons vegetable oil
- 600 grams chopped tomatoes
- 2 garlic cloves minced
- ¼ medium white onion, chopped
- 3 canned chipotles
- Parsley and coriander to decorate (optional)
- Salt and pepper to taste
Preparation:
Cut the pork chops into small size cubes. You could also use the whole chops.
In a large skillet, add the oil and when hot, add the pork chops. Stir-fry meat 6 to 8 minutes until browned.
On the other hand, in the blender glass add the tomatoes, the garlic, the canned chipotles and half a cup of water. Blend until you have a smooth sauce.
As soon as the meat is browned, remove it from the pan and transfer it to a plate. Remove excess fat from the pan and add the chipotle sauce that we just processed. Cook over low heat for 5 minutes after boiling.
After this time, add the pork chops again, season to taste, and continue cooking over low heat for another 6 minutes until the sauce is reduced and the meat takes on all the flavors.
Finally, place in a deep bowl and sprinkle with chopped parsley and coriander.
